The “GFB” (Ginger Food Blogger) is a food photographer in the DFW area that focuses on locally owned restaurants.
When asked why a deli? The response was simple… “who doesn’t love a sandwich?”
I couldn’t agree more. One thing I took from my days of traveling the globe was that Europe and mostly anywhere but here has a deli on almost every street corner rather than a McDonald’s.
@tradesdeli fills that void for the vibrant Bishop Arts neighborhood. Inspired by their travels to various parts of Europe, Trades captures the essence very well serving hot and cold sandwiches made on fresh baked bread using their smoked and deli meats. I first stopped in for the photogenic breakfast sandwiches, I ordered the pastrami and egg on an everything bagel with Gruyère cheese.
The pastrami was smoked as well as any I’ve had in my bbq endeavors. A crispy textured bark contrasted by the soft scrambled eggs and the melty cheese. It was hearty and honestly enough for two. However, I couldn’t stop there and went back for the Italian beef. Braised beef smothered in provolone, lightly soaked with a very flavorful jus riddled with crunchy giardiniera. I could’ve used much more giardiniera but that’s only because it was so good and I love a good array of pickled veggies.
The interior design, the vibes, and the food makes this a must visit whether you’re a local or in need of a good deli and willing to drive.

Welcome to @cenzospizzaanddeli a local pizza joint made and served by locals.
Another reason while the pandemic wasn’t all bad. It allowed for people to get bored and start to create. This project is the result of that, leading to the owners looking for a place to chill in their neighborhood and have good pizzas and sandwiches. The inviting curb appeal leads to a quaint, well designed interior boasting local beers, a myriad of wines and Cenzo’s branded skateboard decks.
Jason spent 8 years working at various pizza spots learning all he could about various styles of pizzas like, New York, Neopolitans and Detroit style. Their pizza is a hybrid of New York, New Haven and Neo. Arguably some of the best style pizzas around.
The pizza is thin… impressively thin, with a crust that has a good chew and a crispy exterior that shines like a fresh a coat of lacquer. A wide range of pies but we sampled the Rosemont (traditional plain) and the Montclair featuring sausage, fennel and leeks. I haven’t had the sandwiches but the pizzas ensured I will return. DFW is slowly but surely growing in the pizza market and joints like this that offering something more than a thick doughy crust with canned sauces will continue to escort us into the pizza world I want to live in.

Concerts, Small towns, hot springs, ghost towns, mountainside roller coasters and… pizza.
Colorado was the refresh the wife and I needed! After heading up for a show at Red Rocks we used the rest of the week for a short getaway. We bounced around from Denver to Golden to Glenwood Springs and finished in Aspen. A mountain trip is always a perfect reset, especially when you get to finish with pizza. To know @platedbyparker is to love Parker.
Recently, he invited me and some other close friends over for a private dinner cooked by @just_call_me_b___ and him.
It started with a salad that I would only be doing an injustice to try and explain it in detail again, so just stare in awe at its beauty when you swipe. Then we were graced with a variety that consisted of perfectly seared scallops, the juiciest little burgers w/ crispy speck, chicken karaage, and a simply yet elegant lemon parm pasta.
These guys put out food for us to sample that was made with passion and elegance. The salad easily one of the most enjoyable and bright dishes that I can only hope to find again outside of a dimly lit apartment. Belal’s story of the pasta and how it was something he always had as a kid only added to the feeling of warmth and excitement when you had a bite. To make such simple and limited ingredients taste so good, well that’s impressive.
A little bit of fernet and “hard caprisuns”, a lot of laughs and copious amounts of breathtaking food makes for a memorable night. Enjoy some of the highlights.

Just like that… another @troubadourfest has come and gone.
I don’t make it to all of them but I make sure not to miss Celina. This year was dare I say… the best or at least my favorite. The music, the crowd, THE FOOD and the atmosphere. @chasecolston sure knows how to throw a party.
Pitmasters got creative from Bar B Quterie cups and brisket ice cream to salsa matcha wings and shepherds pie. The list of bites that blew me away is long and the amount of people I am so lucky to get to see in one place is even longer. Even with the addition of images I can upload I still can’t load all of my favorites! Enjoy this little recap and mark your calendars for next year.
Thankful to see all the guys and gals and continue to try and support them anyway I can. Thankful to the new relationships I made as well!

More often than not, I hear how much chefs loathe BRUNCH and everything it stands for. However, @encinadallas and Chef @mjbalke seemed to have embraced brunch. When asked about it he says it’s the food he loves to eat and typically on vacation, that’s the food he and his family seek out.
In my opinion and I’m sure many others, they have become distinguished for their notorious blue corn pancakes. Some folks like @bata.eats have molded their whole persona around these pancakes, love you Jamil, haha. While the pancakes are my favorite as well, I want to be abundantly clear that their brunch menu is impeccable from top to bottom. With a few rotating dishes and croissants to die for from B-Side Baked Goods, Encina stands alone at the top of my brunch list.
Recently @daniel_eating_dallas and I had a dad brunch outing and we went a little crazy with the menu. First, the spiced honey pork belly tops a luscious bed of cheddar grits topped with two perfectly fried eggs. We would continue with cheddar and chive biscuits with a chorizo-sweet corn gravy and these goat guisada tacos. The goat was rich with flavor, cooked down perfectly wrapped with melty cheese covered tortillas.
The food contains a depth that quite honestly I don’t think many brunch menus have these days. It seems most are just repeating the same items with their own flare a la eggs Benedict, migas, chicken and waffles, etc. Not that I don’t love any of those items but it just feels like copy and paste in an effort to capitalize on the money that brunch brings into the restaurant.
Make a reservation… now. Take a few friends, order pancakes for the table and explore the menu and enjoy.

In a city of out of town Corporate restaurant groups with plant walls, neon signs and sparklers a good guy has emerged. Meet @goodwins.dtx, the baby of @bektx and @auggietron.
Jeff and I have known each other for a little thanks to his graciousness for volunteering to host me and @bobspizzatour during his time @zolisnypizza. It was a gesture that to him was probably small but to me just getting my feet wet in this food thing was pretty cool. I learned his story and realized that his burger had been a long time favorite of mine, I just didn’t know.
After a tedious buildout, for good reason, look how beautiful it is. Goodwin’s was finally open. I took my wife once and then went back with friends and went back again for the first day of lunch to snag this elite burger. The menu is Americana to its core and priced fair when they could have easily looked around at the landscape they were in and raised them. The restaurant, a beautiful buildout of warmth, with a darker moody dining room and a clear view of the inner workings of the kitchen as a nod to the customer to say, we’re not hiding anything here. It’s not pretentious and the staff are more welcoming than your grandmother at Thanksgiving.
The burger… draped in a gooey “American Chz spread” w/ charred onions, thicc dill pickle chips and dijonaise is a new favorite of mine. Jeff’s burgers have always been a thing of beauty but this might be his best. Some things I tried during the couple of dinners that I didn’t photograph are the cheese beignets, zucchini chips, the bread (it’s to die for), the steak sandwich and market oysters. Each one imprinted on my stomach and calls out to me when I enter the area. I look forward to going back for more.

While the origins of Tavern style pizza may remain a great debate, Wade over at @divisionbrewing is cranking out a great rendition.
Tavern style pies are debated to have originated in either Milwaukee or Chicago in and around the 30s and 40s. Made as a snack typically as a way for bartenders to entice patrons to stay and drink longer, these pies are yeasted, thin, and with crispy edges.
To ensure he got it right, he even made a visit up north to compare his pies with theirs, and feels confident in his product. Wade is using a cold fermented dough. Once it’s ready, it’s rolled thin and docked (poke small holes) then stacked in between parchment paper until it’s ready. Once it’s go time it’s thrown onto some cornmeal, topped with ingredients and into the oven. Due to their thin nature, the pizza is crispy throughout and truly is light enough to be a snack rather than a full meal.
For my first of many visits I got the Grifter which consisted of delectable pepperoni cups, handmade fennel sausage, soppressata and cheese. They were nice enough to leave a couple slices plain for my son, the picky little eater. The roni cups add another crispy element when baked and typically are pooling with yummy oil. The soppressata was layered under the cheese and the handmade fennel sausage varied from small bites to big crispy chunks.
There’s not much for Tavern style pizza in DFW but, I’d imagine this would hold its weight against some others. I look forward to trying it again and to try a few different variations from their big menu. Go check them out and try it for yourself! The beer is great, too!
